instant edible cookie dough with 28 grams of prote instant edible cookie dough with 28 grams of protein @icelandicprovisions 😍

to make it:

for the cookie dough:
1 (4.4-ounce) carton @icelandicprovisions Salted Caramel & Banana skyr
2 tablespoons powdered peanut butter
1/2 scoop vanilla protein powder
dark chocolate chips

for the magic shell (optional):
2 tablespoons dark chocolate chips
1 teaspoon refined coconut oil
flaky sea salt 

Stir together the skyr, powdered peanut butter, protein powder, and desired amount of chocolate chips. Enjoy immediately or store in the fridge.

for the magic shell:
Combine the chocolate and oil in a small microwave-safe bowl. Microwave until melted, stirring every 30 seconds. Use a spoon to spread the chocolate over the top of cookie dough. Top with flaky salt.

Refrigerate or freeze until the chocolate is completely set. Crack the chocolate shell and dig in!

to make them: 

2 large eggs
1/4 cup small-curd cottage cheese 
1/4 cup freshly-grated Parmesan cheese 
hash brown patty and chili crisp, for serving (optional)

preheat the oven to 450F. line a baking sheet with parchment paper. 

separate the eggs, placing the whites in a clean mixing bowl and the yolks in two separate small bowls.

using a hand mixer or stand mixer fitted with the whisk attachment, beat the whites to stiff peaks. gently fold in the cottage cheese and Parmesan (if your cottage cheese is runny, try to drain off any extra liquid first).

spoon the mixture into two mounds on the prepared baking sheet (ignore the fact that mine isn’t lined in the video, I ran out of parchment!), then use the back of a spoon to make indentations in the centers. 

bake for 3 minutes, remove from the oven, and carefully add the yolks. return to the oven for 3 minutes (or longer for firmer yolks). 

serve atop hash brown patties and top with chili crisp 🌶️

adapted from @brialem’s recipe which I’ve had saved for YEARS. so happy I finally made it. better than I even expected!!!!

2 overripe bananas
1/2 cup milk 
2 large eggs
splash vanilla extract 
2 cups protein oats (I used @bobsredmill) or old-fashioned rolled oats 
1 cup vanilla protein powder (I used @ritual)
1/3 cup packed light or dark brown sugar, or coconut sugar
1 teaspoon baking soda 
1/4 teaspoon kosher salt 
a mix of chopped chocolate +  chips (I used chopped bittersweet + semisweet chips)
flaky sea salt 

Heat the oven to 375F. 

Mash the bananas in a large bowl. Microwave 2 min (this intensifies their sweet flavor). Add the milk, eggs, vanilla and whisk to combine. 

Blend the oats until finely ground, then add to the bowl along with the protein powder, brown sugar, baking soda, and salt. Stir to combine. Fold in most of the chocolate. 

Spray a 10-inch oven-safe skillet, line with parchment, then spray again. Add the batter and smooth the top. Top with remaining chocolate. Bake until a toothpick comes out clean, 12 to 15 minutes. (Don’t overbake — we’re going for soft and almost underbaked vibes). 

Sprinkle with flaky salt, let cool just a few minutes, then slice into squares and serve warm. 

I plan on eating leftovers for breakfast in my yogurt bowl 😍 if you’re not into chocolate I also made a version with frozen blueberries that was amazing
