here’s a loose recipe; use what you’ve got! 

for the tofu:
1 block firm or extra firm tofu, drained and pressed 
1 tablespoon olive oil 
1 tablespoon low-sodium soy sauce 
2 tablespoons cornstarch 
1/2 teaspoon kosher salt 

for the bowls:
4 Persian cucumbers, chopped 
3 carrots, peeled and shaved into ribbons 
1 cup shelled edamame 
chopped cilantro or scallions 
peanut dressing (homemade or store-bought) 
cooked white rice (optional)
Japanese bbq sauce, for serving 
Spicy mayo, for serving (optional)

tear the tofu into pieces into a large bowl. add the oil, soy sauce, cornstarch, and salt and toss to coat. air fry at 400F for 15-20 min or bake on a parchment-lined baking sheet at 425F for 20-25 min. 

toss the veggies and herbs lightly with peanut dressing and season with salt to taste. 

build bowls with rice, veggies, tofu, a drizzle of Japanese bbq sauce, and spicy mayo. I make my mayo by mixing kewpie mayo with chili crisp and rice vinegar.
