who else grew up on cinnamon toast? 🙋‍♀️ here’s m who else grew up on cinnamon toast? 🙋‍♀️

here’s my twist to make it a little more substantial:

for the cinnamon sugar:
1 tablespoon granulated sugar
1/2 teaspoon ground cinnamon
pinch of flaky sea salt

for the toast:
1/2 cup 2% or 4% small-curd cottage cheese
1/4 teaspoon pure vanilla extract
2 slices bread
salted or unsalted butter (optional)

Mix together all the cinnamon-sugar ingredients.

Whip the cottage cheese in a mini food processor until creamy.

Combine the whipped cottage cheese, vanilla, and half the cinnamon-sugar. 

Toast the bread, spread with butter (if desired), then spread the whipped cottage cheese onto the bread, going all the way to the edges. sprinkle with the remaining cinnamon-sugar.

Air fry at 400°F until bubbling and starting to brown, about 5 minutes. (Or use toaster oven or broiler). Enjoy with fresh fruit!

I always use sandwich bread but I need to try it with challah bc that’s what we had as kids 😊

1 large egg
2 tablespoons cottage cheese
Kosher salt and freshly-ground black pepper
1/2 tablespoon unsalted butter
1 slice cheese (such as cheddar or American)
Toasted bagel, English muffin, or a slice of toast

Whisk together the egg, cottage cheese, and a pinch each salt and pepper in a small bowl until combined. 

Heat a large nonstick skillet over medium heat. Once hot, add the butter and cook until sizzling but not brown. (Alternatively, brush or spray skillet with oil). 

Pour in the egg mixture and quickly rotate the pan so the egg covers the bottom in a thin layer, like a crepe. It will start to set immediately. 

Add a slice of cheese (or a pile of grated cheese) and, when the egg is set, fold all the sides into the center so that the cheese is all wrapped up (cover the skillet to help the egg set it needed). 

Transfer to a toasted bagel, English muffin, or slice of toast. You CAN get fancy and add avocado, bacon, or any other breakfast sandwich fixings, but trust me — you don’t really need it. If anything, I spread the bagel with a little bit of laughing cow cheese 🙂

this oreo mcflurry cheesecake cup has clinched the number 2 spot 💃

yes, I eat “real” desserts too. but these are great for days you’re short on protein but still want something sweet. it doesn’t have to be either/or!

to make it:

1 (5.3-ounce) cup 2% or full-fat cottage cheese (like the @good_culture cups); otherwise measure out a heaping 1/2 cup
1/4 cup 2% or full-fat plain Greek yogurt (I always use @fage) 
1 tablespoon pure maple syrup
1/2 teaspoon pure vanilla extract
2 Oreos or Oreo thins 
1/2 ounce bittersweet chocolate, chopped (or ~2 tablespoons dark chocolate chips)
1/2 teaspoon refined coconut oil

Drain the cottage cheese, if needed. (The less liquid you start with, the thicker the cheesecake mixture!).

Combine the cottage cheese, yogurt, maple syrup, and vanilla in a mini food processor or high-speed personal blender. Process until fully whipped and combined, scraping down the bottom and sides as needed. Crumble in one Oreo and pulse until mixed in (you can make it as smooth or chunky as you like). 

Crumble the second Oreo into the bottom of the now-empty cottage cheese cup (or small bowl). You can do this with your hands or, for finer crumbs, place it in a ziplock bag and smash it with a rolling pin. Spoon the cheesecake mixture into the cup. 

Combine the chocolate and coconut oil in a small microwave-safe bowl. Microwave until melted, stirring every 30 seconds. Use a spoon to spread the chocolate over the top of the mixture.

Freeze until the chocolate is completely set, at least 10 minutes and up to 1 hour. (Any longer, and the mixture will begin to freeze…you instead want it to be a thick pudding/mousse-like texture). I’d say 20-30 minutes is the sweet spot.

Crack the chocolate shell and dig in! 🥄

in our number 3 spot is the cottage cheese twice-baked potato🥔😍🧀 good enough to eat for both lunch and dinner, I don’t make the rules! 

the idea here is that you can do this with any baked potato: just fold in cottage cheese, shredded cheddar, chives, black pepper, and salt to taste. return to a 375F oven until the cheese is melted and browned in spots, 20-25 min. broil if you want a crispier top!

for Martha’s method, bake a large (6-8 ounce) Yukon gold potato directly on the rack at 325F for 90 minutes. split it open and stuff! the Yukon gold is extra creamy and fluffy
