Ingredients

  • 1 cup plain Greek yogurt (I like 2% Fage)
  • 2 cups tender herbs (such as basil, dill, cilantro, parsley, chives)
  • 2 tablespoons diced red onion or shallot
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice (~ the juice of 1/2 lemon)
  • 2 tablespoons white wine vinegar or white balsamic
  • 1 clove garlic
  • 1 teaspoon kosher salt
  • several grinds black pepper
  • hot sauce to taste

Instructions

  • Add all the ingredients to a food processor or high speed blender and blend until smooth. Add more of any of the liquids to thin it out, if necessary. I like it to be thick enough to spread on sandwiches but still pourable for salads.
  • Use it on: chopped salads, pasta salads, bean salads, wedge salads, potato salads, grain bowls, burrito bowls, sandwiches, or as a pizza sauce or a dip for raw or grilled veggies — plus a million other things that you’ll think of once you try it.
