high-protein cottage cheese cinnamon toast

my high-protein (20g) twist on the classic childhood favorite — for when you want something sweet but not *too* sweet.
serves 1

Ingredients

for the cinnamon sugar:

  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground cinnamon
  • flaky sea salt

for the toast:

  • 1/2 cup cottage cheese
  • 1/4 teaspoon pure vanilla extract
  • 2 slices bread

Instructions

  • Mix together all the cinnamon-sugar ingredients.
  • Whip the cottage cheese in a mini food processor until creamy.
  • Combine the whipped cottage cheese, vanilla, and half the cinnamon-sugar. Spread onto bread, going all the way to the edges. (I like to toast sandwich bread first to make sure both sides crisp; airier bread is fine as-is). Sprinkle with remaining sugar.
  • Air fry at 400°F until bubbling and starting to brown, about 5 minutes. (Or use toaster oven or broiler). Enjoy with fresh fruit!

    Very tasty! I’ll definitely make it again. I might spread it thinner or maybe broil it in the oven to get the top a little more browned but the flavor satisfied my craving.

      Eat something very similar for probably 60 years.Two ideas I hadn’t tried before though the sea salt and using food processor to cream the cottage cheese.Thanks,will be trying it today
