Despite the fact that half the videos I save on IG and TikTok are fancy iced coffee drinks, I never seem to find the time/motivation/resources to re-create them. Instead, I typically make my hot coffee at home, but spend $$ on iced coffee from a local spot here in Pittsburgh (shout out BeanThru :)).
That all changed when SToK sent me a bunch of their bottled cold brew, and I realized I could create a pretty stellar iced coffee beverage myself. Plus, it meant I could add protein, too.
While I love the simplicity of SToK cold brew mixed with a Fairlife chocolate protein shake, my favorite creation has been a shaken cold brew, because a) shaking it makes it extra cold and refreshing and frothy; and b) it satisfies my cravings for an expensive shaken espresso. This peanut butter version was born out of my love for my peanut butter protein powder, which I’ll share the details of below.

The cold brew: Any homemade or store-bought cold brew is great here. Obviously I’m using SToK, which is my favorite brand because of their wide range of offerings. Their “Not Too Sweet” blend is my favorite because you get a touch of sweetness that’s not overpowering. They also now offer Decaf varieties which is great for afternoon coffees or making a half-caf drink. Just be sure if you’re using a cold brew concentrate (like this one) that you dilute it with water before making this recipe.
The milk: This recipe works with both dairy and non-dairy milk. I always use Fairlife milk for extra protein (and I like that it’s lactose-free), but if you’re opting for non-dairy I would go for full-fat oat milk because it will make for the creamiest drink.
The protein powder: I use this Ghost Vegan Peanut Butter Cereal Milk protein powder in smoothies, overnight oats, and now — my coffee drinks. It is ridiculously good! With that said, feel free to use your favorite brand and flavor of protein powder (vanilla, peanut butter, or even chocolate are all good options).

The blender: Every time I post about my Beast blender, I get a ton of questions and compliments. That’s mostly because it’s super cute, but as someone who uses it daily, I can tell you it’s super powerful and always gets the job done. Highly, highly recommend. I have both the Beast Mini Blender Plus (what I use for single-serve drinks for this one) and the Mega 1200 (better for blending sauces, soups, and multiple servings of drinks or smoothies).
Wide-mouth Mason jar lids: This is probably the second most asked about item on my IG stories! These lids screw easily onto any wide-mouth Mason jar and are so much easier to use/clean than the standard metal ones.

serves 1

Ingredients
- 1/2 cup dairy or non-dairy milk (any fat percentage; I like Fairlife 2% for extra protein)
- 1/2 scoop vanilla, peanut butter, or chocolate protein powder (I use Ghost Vegan Peanut Butter Cereal Milk)
- 1 tablespoon natural creamy peanut butter (such as One Trick Pony)
- 1/2 cup homemade or store-bought cold brew (I like a lightly sweetened one such as SToK Not Too Sweet)
Instructions
- In a personal-sized blender, combine milk, protein powder, and peanut butter. Blend until smooth.
- Fill a Mason jar (or other lidded jar) with a scoop of ice. Add the cold brew, twist on the lid, and shake until frothy. (If you're using cold brew concentrate, be sure to dilute it with water before adding it to the ice).
- Pour the protein shake over the cold brew and stir to combine.
